What You Need:            (To Serve: 2 - 4)

  • 1 pound sheep's kidneys
  • Seasoning
  • 1 large onion
  • A pinch of caraway seeds
  • 2 oz dripping
  • ½ pint water
  • 2 teaspoons flour
  • 1 tablespoon vinegar

  • How To Cook:
    1. Soak the kidneys in warm water to remove the skins, cut in half and remove the cores.

    2. Slice the onion and fry until brown in a pan in a little melted dripping, then fry the kidneys until they are well browned.

    3. Add the flour and seasoning and lastly the caraway seeds.

    4. Gradually pour in the water and vinegar, and simmer gently for 5 minutes; serve at once.
