How To Cook: |

1. Mix together the sugar, flour and almonds.
|
2. Rub butter into the dry ingredients.
|
3. Add the egg yolk and work to a dough.
|
4. Chill to a manageable consistency.
|
5. Roll out two-thirds and line an 8-inch fluted flan ring.
|
6. Spread with a layer of roughly chopped raspberries and sugar.
|
7. Roll out rest of the dough, cut into wide strips, and closely lattice the flan.
|
8. Bake at 350°F, for 1¼ - 1½ hours.
|
9. Leave to cool slightly before removing ring.
|
10. Serve cold, dusted with icing sugar.
