Rabbit
FOR THE MARINADE
2 pints water
3 oz parsley
10 peppercorns
10 juniper berries
4 bay leaves
Sprig of thyme
1 cup vinegar
3 oz carrot
2 oz celery
Salt
FOR THE SAUCE
2 tablespoons flour
1 cup sour cream
½ oz butter

How To Cook: |
|
|
1. Boil up all the ingredients of the marinade for about 10 minutes.
|
2. Cool, pour over the jointed rabbit, cover and let stand for 12 hours.
|
3. The next day, simmer all together until the meat is tender.
|
4. Remove the meat and keep hot, strain the liquid and add to it the flour mixed with the cream and butter.
|
5. Boil up again, pour over the meat and serve with dumplings.
