What You Need:            (To Serve: 2 - 4)

  • 3 pound mutton
  • 2 onions
  • 2 pound potatoes
  • Pepper and salt
  • 2 pound runner beans
  • 2 oz butter

  • How To Cook:
    1. Dice the meat, peel the potatoes and cut into thick slices, string the beans and break into 2-inch lengths, peel and slice the onions.

    2. Spread some of the butter on the bottom of a heavy, lidded saucepan and fill the pan with layers of onion, meat, beans and potatoes, seasoning each layer and adding dabs of butter.

    3. The top layer should be of potatoes.

    4. Pour in half a cup of water and cover the pan closely.

    5. Simmer very slowly for about 1½ hours.
