What You Need:            (To Serve: 2 - 4)

  • 2 large onions
  • Lard, cooking fat or oil for frying
  • 2½ pound potatoes
  • Salt and paprika
  • 8 oz firm ham sausage or luncheon meat

  • How To Cook:
    1. Peel and slice the onions and fry till golden-brown.

    2. Add the potatoes, peeled and cut into ½-inch cubes, with half a cup of water, and salt and paprika to taste.

    3. Turn the heat low, cover the pan with a well-fitting lid and simmer for 15 minutes, then add the cubed sausage or meat, and simmer for a further 5 minutes.
