How To Cook: |

1. Rub the meat with salt, pepper and paprika, and sprinkle with caraway seeds.

2. Dice the vegetables and fry in the fat.
|
3. Transfer to a roasting pan with a lid and add the meat and a little water.
|
4. Cover the pan and cook slowly for 1½ hours at 340°F.
|
5. Remove the lid and let the meat brown a little, remove, slice and keep hot.
|
6. Add capers and parsley to the liquid and vegetables in the pan, pour in the cream, bring to the boil and pour over the meat.
