1 pound salt cod
1 small clove of garlic
2 Spanish onions
½ pound tomatoes
2 red peppers
2 tablespoons olive oil
Pepper

How To Cook: |

|
1. Cut the cod into 2-inch cubes and soak it overnight in cold water; the next day, drain and remove the skin and bones, put into a pan and just cover with tepid water, then cook very slowly until tender. (Quick cooking will cause the fish to break.)

2. Drain the fish.

3. Meanwhile peel and chop the garlic, peel and slice thinly the onions and tomatoes and cut the peppers into strips.
|
4. Heat the olive oil and fry the fish lightly, handling the cubes carefully to avoid breaking, then drain and put in a fireproof dish to keep hot.

5. Fry the onions with the garlic until soft and yellow, add the tomatoes and continue cooking until they are tender.

6. Add the peppers to the sauce, season with pepper and pour over the fish.
